Maple-Cream Apple Pie

4 cups thinly sliced peeled tart apples 1/4 cup sugar 1 teaspoon ground cinnamon 1/4 cup butter, cubed 1 pastry shell (9 inches), baked FILLING: 1 package (8 ounces) cream cheese, softened 1-1/2 cups cold milk 1 package (3.4 ounces) instant vanilla pudding mix 1 teaspoon maple extract TOPPING: 1/4 cup sugar 3 tablespoons quick-cooking oats 3 tablespoons all-purpose flour 1/2 teaspoon ground cinnamon 2 tablespoons butter, melted
