Makeover Chocolate Truffle Dessert Recipe
  • Prep: 30 min. + cooling Bake: 25 min. + chilling

Ingredients

  • 1 box fudge brownie mix (8-inch square pan size)
  • 3 cups (18 ounces) semisweet chocolate chips
  • 2 cups heavy whipping cream, divided
  • 6 tablespoons butter, cubed
  • 1 tablespoon instant coffee granules
  • 3 tablespoons vanilla extract
  • 14 to 16 Pirouette cookies, cut into 1-1/2-inch pieces

Directions

  • Prepare brownie batter according to package directions. Spread into a greased 9-in. springform pan. Place on a baking sheet. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  • Place chocolate chips in a food processor; cover and process until finely chopped. In a small microwave-safe bowl, combine 1 cup cream, butter and coffee granules. Microwave, uncovered, on high for 1 to 1-1/2 minutes or until butter is melted; stir until smooth. With food processor running, add cream mixture to chocolate chips in a slow, steady stream. Add vanilla; cover and process until smooth.
  • Cut a small hole in the corner of a pastry or plastic bag. Fill with 1/4 cup chocolate mixture; set aside for garnish. Transfer remaining chocolate mixture to a large bowl.
  • Remove sides of springform pan. Spread half of the chocolate mixture over brownie layer, spreading evenly over top and sides. In a small bowl, beat remaining cream until soft peaks form; fold into remaining chocolate mixture. Spread over chocolate layer. Gently press cookies into sides of dessert.
  • Pipe reserved chocolate mixture on top. Cover and refrigerate for at least 4 hours or overnight. Remove from the refrigerator 5 minutes before cutting. Yield: 16 servings.

I made this for a church function where it was being auctioned off to highest bidder. Someone pd $50 and took it to a family event. Everyone loved it. Get two cans of pirouettes, one was not enough.

The "makeover" is supposed to be a lighter version than the original. This is higher in calories & fat than the original. That's why it's always wise to look around for recipes & not stop at one because it says "makeover". To those looking for a healthy version...it's not a dessert that you can make healthy but there are lighter versions out there.

It was a hit at the office. I melted the chocolate chips instead of using the food processor, and I had left over of the garnish mixture. The cookies around the edge had a different texture after chilling over night.

Great dessert, everyone loved it. It is very rich and the 16 servings recommended as portion size is just right.

The truffle layer of this recipe was actually easier than I expected. The directions may seem complicated, but it is not.

The dessert turned out wonderfully. I used a ghirardelli brownie base and the same brand chocolate chips - however I used dark chocolate. The coffee was a chocolate blend. It was as pretty as the picture and went over well.

It is definitely an "adult" recipe. If you are serving to a younger crowd, I recommend leaving out the coffee granules. Make one!

 I made this as an Easter dessert for the holiday this weekend.  My husband's family raved about it although it is a splurge dessert.  A little time consuming on the first go-round but not difficult to make.  I would recommend using 1/4 of the chocolate mixture for the base and then folding 3/4 the chocolate with the whip topping so there's more mousse.  I also used another cup of heavy wipping cream with some sugar and vanilla and put that on top so it wasn't so chocolatey.  To cut down on calories I think next time I'll get low fat whipped topping and use that instead of making homemade with the heavy cream.  This one is going into the recipe box with a star...it's a dessert to make when you want you dish to look fancy!

I agree. THis is probably great for a splurge dessert, but a lower fat/calorie version could still be delicious!

I bet there is a way to do a low fat pudding mixture on the top of the brownie, instead of the heavy whipping cream and chocoalte. Kraft.com has many ideas for using chocolate pudding (I bet adding some cream chesse, or frozen whipped low fat topping would work good).

Can you work on a makeover that might cut the fat a little? The time isn't as much of a factor for us as cutting down the unhealthy nutrition.
