I did use half fat free sour cream and it worked fine. these were awesome even better the next day.

To make even healthier I use whole wheat tortillas and substitute the sour cream with non-fat plain greek yogurt. These are extremely easy to make and taste delicious.

I really liked this "lighter" version and I made two pans and froze one since there are only two of us. I did not bake the one I was going to freeze because everything was basically cooked. When I thawed and heated the frozen one, I did so on a very low heat (325) for about 40 minutes. That way my low-fat sour cream and soup didn't separate as much. Great recipe!

Good, grief, people, a serving is 2 enchiladas. Just have one and you're fine.
The easiest way to make this recipe healthier is 1/2 the cheese and sour cream. Carb wise, use smaller tortillas... Otherwise, Yum!

i spiced up mine by adding some chopped jalapenos with the mixture and pan frying the chicken in crushed red peppers and i found some jalapeno chedder wraps that make these perfect.

It was a little bland for my tastes so I think the next time I make this, I will add some seasonings to spice it up.

How can this recipe be considered healthy? Just one serving has 1/3 of your daily calories, 123 mg of cholesterol and 1,164 mg of sodium!!! Just because it's lower in fat doesn't magically make it healthy!

This is def a family favourite! :) It's a lil fatty so I only make it once every 2 weeks.... we've not once had leftovers. mmm DELISH! Instead of buying Monterey Jack & Cheddar Cheese I just buy a bag of Mexican Taco Cheese and it makes this recipe twice as good!!!

i thought it was rather blah. lacked flavor. if i was to make it again, which i probably won't, i'd add some hot sauce or chili powder to the soup mixture. maybe some canned corn too.

I always read for sodium content, but that is ME. Others may have to watch their fat intake, etc. So, take what you want from a recipe, pass on the others, but don't expect them to be tailored to just what YOU need. If I want lower sodium, I go to low sodium recipe section, not the make-over section. With the hundreds of thousands of recipes on the web, no one can go without a good recipe tailored to THEIR needs. Have a happy day.

I'm with crbabjab...I always check the nutritional info before I try a new recipe. Not sure how this comes in under "Light and Tasty". Might be tasty - certainly NOT light!
