1 egg
1 egg white
2 cups mashed ripe bananas (about 4 medium)
1/4 cup unsweetened applesauce
1/4 cup honey
1 teaspoon vanilla or rum extract
1-1/3 cups all-purpose flour
2/3 cup whole wheat flour

Combine the flours, baking soda and salt; gradually add to banana mixture just
until moistened. Pour into a 9-in. x 5-in. loaf pan coated with cooking spray.
Sprinkle with nuts. Bake at 325° for 60-65 minutes or until a toothpick
