Make-Ahead Scrambled Eggs

2 cups soft bread cubes (crusts removed) 1-3/4 cups milk 8 eggs, lightly beaten 3/4 teaspoon salt 1/8 teaspoon pepper 3 tablespoons butter or margarine, divided 2 cups (8 ounces) shredded Swiss cheese 1/4 cup dry bread crumbs 6 bacon strips, cooked and crumbled
Combine bread cubes and milk; let stand 5 minutes. Drain, reserving the excess milk. Place bread in a greased 8-in. square baking dish; set aside. Combine eggs and reserved milk; add salt and pepper. Melt
