Ingredients:

  • 1/3 cup butter or margarine, softened
  • 1 package (3 ounces) cream cheese, softened
  • 3/4 cup sugar
  • 1 egg yolk
  • 1-1/2 teaspoons almond extract
  • 2 teaspoons orange juice

  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

In a mixing bowl, cream butter, cream cheese and sugar until light and fluffy. Combine egg yolk, extract and juice; add to creamed mixture and mix well. Combine flour, baking powder and salt; gradually add to creamed mixture and mix well. Stir in 3 cups of coconut. Cover and chill for at least 1 hour. Shape into 1-in. balls; roll in remaining coconut. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned.
