THIS IS one of those dishes that our family calls "a Mama recipe". My mother rarely consulted a cookbook, so when asked for a recipe, she could only estimate. I've worked out the ingredients to make it for two, but it can easily by doubled. It's simply a good, wholesome dish most folks seem to enjoy. —Betty Allen East Point, Georgia

Macaroni and Cheese for Two Recipe
  • Prep: 10 min. Bake: 30 min.

Ingredients

  • 1-1/2 cups cooked elbow macaroni
  • 1 cup (4 ounces) shredded sharp cheddar cheese
  • 1/2 cup milk
  • 1 egg, lightly beaten
  • 1/2 teaspoon salt
  • 1 tablespoon butter

Directions

  • In a medium bowl, combine macaroni, cheese, milk, egg and salt; mix well. Pour into a greased 1-qt. shallow baking dish; dot with butter. Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean. Yield: 2 servings.

Nutritional Facts 1 serving (2 cups) equals 447 calories, 27 g fat (18 g saturated fat), 190 mg cholesterol, 1,050 mg sodium, 30 g carbohydrate, 1 g fiber, 21 g protein.

So Easy and so good!

I love this recipe! I usually double it so we can have leftovers. I omit the butter because it seems to make it too greasy and really doesn't add any flavor. I also usually add panko breadcrumbs before baking. This is my new go-to mac and cheese recipe. It is super quick and easy and tastes amazing!

I thought this was great! I doubled it, used corkscrew pasta, and added breadcrumbs to the top. I would omit the butter next time though, as it made it a bit greasy. Other than that, super quick and easy and definitely a winner!

Simple, short and to the point. But with 27 g of fat, it is a heart attack waiting to happen! I like cheese but I also want to live a long and healthy life. I cut cheese in half and use Egg-Beaters. It is still cheesey just not at creamy and tastes just as great!

Although the serving size of this recipe is great it did not meet my expectations. I followed the recipe carefully but my macaroni was dry and greasy.

My boyfriend helped make dinner and this was his job. He didn't know whether it meant to cook 1 1/2 cups of noodles and use amount or measure 1 1/2 cups of the cooked noodles. He added extra cheese, but it still needed more. A good recipe but we may need to tweak it more!

This is a great recipe! It can easily be doubled or triped depending on the volume of company. I also increased the amount of butter to about 1 1/2 TBS and extra cheese on top. Very yummy!

I increased the butter to 1 1/2 TBS. After baking, I added additional shredded cheese to the top and returned it to the oven to melt. This recipe was very good. Thanks for sharing.

I like the fact that the recipe is small and easy.  I can't see eating this many calories over and over again so this one is right up my alley.
