Tired of the same old mashed potatoes, I whipped up this new family favorite. We can't get enough of them at our house. Often, I'll prepare this dish ahead and refrigerate it. Then I bake it just before serving.

Loaded Mashed Potatoes Recipe
  • Prep: 20 min. Bake: 30 min.
  • Yield: 14 Servings

Ingredients

  • 5 pounds potatoes, peeled and cubed
  • 3/4 cup sour cream
  • 1/2 cup milk
  • 3 tablespoons butter
  • Salt and pepper to taste
  • 3 cups (12 ounces) shredded cheddar cheese blend, divided
  • 1/2 pound sliced bacon, cooked and crumbled
  • 3 green onions, sliced

Directions

  • Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and place in a large bowl. Add the sour cream, milk, butter, salt and pepper. Beat on medium-low speed until light and fluffy. Stir in 2 cups cheese, bacon and onions.
  • Transfer to a greased 3-qt. baking dish. Top with remaining cheese. Bake, uncovered, at 350° for 30 minutes or until heated through and cheese is melted. Yield: 14 servings.

I took this to a Christmas party and everyone raved! Nothing left! The real bacon gives it a smokey flavor. Tip: for easy REAL bacon "bits", chop the bacon before cooking. Then cook in skillet stirring with a spatula til done. If you do that while the potatoes are cooking, it will all be done together! Another time saver: use red potatoes and leave the skins on for extra fiber! I will definitely make this again!

I made this to take to our family's Thanksgiving potluck and it was a huge hit! To cut down on the time it takes to make this, I subbed bacon bits instead of frying and crumbling bacon slices and I threw it all into the crock pot!!! Done. Cooked on low for 5 hours, took the whole crock pot to my sisters and kept it on the warm setting...perfect. Thanks for a great recipe. Will certainly be making this again.

The whole family loved this. I wasn't feeding a crowd so I used 5 small potatoes and added milk, butter, and sour cream to taste and consistancy I wanted. I also added some garlic powder. That was a good addition.

We made this casserole for Thanksgiving and there was not a spoonfull left! Even the children and babies couldn't get enough. A definite hit!

These potatoes were excellent and I used skim milk, low fat sour cream, and the small bag of (real) bacon bits, which was 2.8 ounces. Unbelievably good.

i chopped up onions very fine and sauted in little bacon grease and added tbl butter. I also tasted this prior to adding the cheese on top/placing it in the oven. very good..next time i will add garlic! perfect change from the regular mashed potatoes.

This made a decent meal, but it was tons of work! Maybe because it makes a ton (14 servings), haha. We enjoyed it, but each plate definitely needs a shake or two of salt and pepper before consumption. I will probably make it again! :)

This is going to be my go-to potluck recipe! I used only 2 lbs. of yukon gold potatoes (skin-on), and decreased the sour cream slightly and used a splash of cream instead of milk. I used 2 tbsp. of butter and hand mashed. Threw in a little Fontina with the cheddar as well, though only used 1 1/2 c cheese. Tastes almost identical to a nationwide chain's version, but not near as salty. This refrigerates and reheats well, so great for pot luck or treating a sick neighbor with a ready-made, reheat and serve side dish.

<p>I gave these potatoes only 3 stars because the recipe as is lacks quite a bit of flavor. I added a full cup of sour cream, a whole stick of butter, and 1lb of bacon instead of 1/2. When you cook the bacon down you're really not left with a whole lot and my husband LOVES bacon. It's obviously not a lowfat dish but I only make it for Thanksgiving. I also added something called "21 seasoning salute" and it really made a difference (about 1 1/2 tsp.). Oh.. and I added at least a half cup more cheese to the top!! I love cheese!  At Thanksgiving old and young alike RAVE about this dish! Everyone loves it!!!</p>

I thought these potatoes were decent but nothing spectacular. I felt that I could have winged it without a recipe and come up with something just as good. They did have good flavor and were easy to make but I was looking for something special not average. I do not think I would make these again but would still recommend them to someone who likes loaded mashed potatoes and is looking for a good recipe.

These were very tasty and easy to take for a meal at a friend's house. I added garlic powder and onion powder to taste and probably added more sour cream because I like it. I didn't have scallions, so that is why I added the additional flavors. Yum!

I cook for church kids on Wednesday nights and making mashed potatoes for 40 is a lot of peeling and cooking. I 'make' this recipe using instant mashed potatoes (big box at Sam's Club) and add the sour cream, butter, cheese, bacon, and green onions. Everybody loves it and it sure makes instant potatoes taste great. I too use the light sour cream and cheese.

I, too, have made this for years. For the cheese, I mix sharp cheddar cream cheese and fresh grated Parmesan or Romano.

I've been making this recipe for years, under a different title, and I use the REAL bacon bits in a jar instead of cooking the bacon. Works just as well as fresh bacon and sure saves a lot of time & electricity. It's a favorite of ours.
