Loaded Baked Potato Salad Recipe

Ingredients

  • 5 pounds small unpeeled red potatoes, cubed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 hard-cooked eggs, chopped
  • 1 pound sliced bacon, cooked and crumbled
  • 2 cups (8 ounces) shredded cheddar cheese
  • 1 sweet onion, chopped
  • 3 dill pickles, chopped
  • 1-1/2 cups (12 ounces) sour cream
  • 1 cup Hellmann's® Real Mayonnaise

  • 2 to 3 teaspoons prepared mustard

Directions

  • Place the potatoes in a greased 15-in. x 10-in. x 1-in. baking pan; sprinkle with salt and pepper. Bake, uncovered, at 425° for 40-45 minutes or until tender. Cool in pan on a wire rack.
  • In a large bowl, combine the potatoes, eggs, bacon, cheese, onion and pickles. In a small bowl, combine the sour cream, mayonnaise and mustard; pour over the potato mixture and toss to coat. Yield: 20 servings.

Nutritional Facts 1 serving (3/4 cup) equals 316 calories, 21 g fat (8 g saturated fat), 119 mg cholesterol, 510 mg sodium, 20 g carbohydrate, 2 g fiber, 10 g protein.

This potato salad tasted great freshly made but do NOT make the mistake of trying to save time by making it the night before. I made this recipe the night before a BBQ and that was a huge mistake. The next morning, even after adding more mayo sauce, it came out dry tasting and no longer had the rich flavor it had teh night before. Make this recipe same day and eat same day. But yeah it was really good freshly made.

I am excited to try this recipe, it sounds really yummy but I was wondering if you chill it in the refrigerator before serving?

Everyone loved this. To make it a little quicker I add dill pickle relish instead of pickles. Everyone wants the recipe.

Two great big thumbs up! I made this years ago using recipe from Taste of Home. I have not made this for quite some time. I believe that magazine was recycled by accident. I tried to remember how to make it a few times. But it was never as good as the original. The potatoes are in the oven right now! I can't wait!!!!!!!!!!!!

I made this potato salad and took it to our family 4thh of July picnic. Everyone loved it and I have already passed the recipe along to alot of people who "had to have" it!!!

I made this salad for my niece's communion and it was a HUGE hit with family!! So now it has become the most requested potato salad for all family functions.

love LOVE LOOOOVE this recipe...everyone always asks me to bring this. I season the potatoes with Mrs Dash onion & herb, garlic & herb, and Natures seasonings, along with the salt & pepper. I also use fat-free sour cream, low-fat mayo, and reduced fat cheese to try to cut down on the fat & calories some, and there is absolutely no effect on flavor-its still great! (I also use more pickles than listed and I add about 3 to 4 tablespoons of pickle juice to the salad)

I made this for Christmas Dinner last year, which we shared with family friends and neighbors. Everyone loved it and many asked for the "kick ass potato salad" which was what one person called it and now that's what everyone refers to it as.

I made this Potato Salad for Father's Day and it was a hit. I loved the various flavors that blended togther into one dish. My only problem was the potatoes took longer to cook than stated. Will definitely make again.

My husband and 2 kids are picky eaters, but we all loved this recipe. I used 2 cups of salad dressing instead of mayo. and extra mustard. This recipe is delicious and will be filed in my box.

Just keep in mind this is very heavy with the sour cream and mayo compared to your typical potato salad. Actually it's like eating a stuffed potato. I absolutely loved it though and have filed it in my recipe box.

The first time I make a recipe as written and then maybe adjust to taste...BUT I would NOT change anything. This is a very good potato salad. I last took the dish to my woman's club mtg and about everyone just raved about it!

I love this recioe. I made it for my family and they loved it, even the 3 year olds. So i tried it at a large family gathering and everyone loved it. I even had my Aunt request that I make it for her as a Birthday present. This recipe is well worth the time involved.
