Lime Mint Jelly

4 cups sugar
1-3/4 cups water
3/4 cup lime juice
7 drops green food coloring, optional
1 pouch (3 ounces) liquid fruit pectin
3 tablespoons finely chopped fresh mint leaves
1/4 cup grated lime peel

In a large saucepan, combine the sugar, water and lime juice; add food coloring if
desired. Bring to a rolling boil over high heat, stirring constantly. Add the
pectin, mint and lime peel and return to a full rolling boil. Boil for 1 minute,
stirring constantly. Remove from the heat; skim off foam. Carefully ladle
into hot sterilized jars, leaving 1/4-in. headspace. Adjust caps. Process for 15
minutes in a boiling-water bath.

Yield: 5 half-pints.
