Lime Honeydew Sorbet Recipe
  • Prep: 5 min. Process: 20 min. + freezing

Ingredients

  • 3 cups cubed honeydew
  • 1/2 cup sugar
  • 1/2 cup lime juice
  • 1 tablespoon sweet white wine or water
  • 2 teaspoons grated lime peel
  • 2 to 3 drops green food coloring, optional

Directions

  • In a food processor or blender, combine honeydew and sugar; cover and process until sugar is dissolved. Add the remaining ingredients; cover and process until blended.
  • Freeze in an ice cream freezer according to manufacturer's directions. Spoon mixture into a freezer-safe container; cover and freeze in the refrigerator freezer 2-4 hours before serving. Yield: 4 servings.

Nutritional Analysis: One serving (3/4 cup) equals 154 calories, trace fat (trace saturated fat), 0 cholesterol, 14 mg sodium, 40 g carbohydrate, 1 g fiber, 1 g protein. Diabetic Exchanges: 1-1/2 fruit, 1 starch.

My 12 year old son was diagosed with diabetes last week. I am looking for recipes for him. This one looks like something he could eat, with the substitution of Splenda. Using splenda would change the carb count from 40g per serving to 17g per serving. Much more manageable to work into diet. This would also change the calories from 154 to 88. I haven't tried it yet, but I'm sure it would work well with Splenda.

My son's dr. and nutritionist said to steer clear of sugar alcohol especially for children, and all of the sugar free ice creams have sugar alcohol. This sounds like a great substitute!

Usually you can't just freeze a ice-cream recipe in a container because the freezer is whipping air into it. But it usually works in my opinion to freeze it in a glass container and every hour or so stir it all up with a fork to break up the ice crystals. You end up with not quite the same, but satisfactory, results.

the Lime Honeydew sorbet looks delicious! However 40 g of carbs is nearly a whole meals worth of carbs for a diabetic.

I don't see sugars in the nutrition facts. It's great that it is no fat; however, I would like to see what the grams of sugar are.
