Lentil-Tomato Soup Recipe
  • Prep: 15 min. Cook: 30 min.

Ingredients

  • 4-1/2 cups water
  • 4 medium carrots, sliced
  • 1 medium onion, chopped
  • 2/3 cup dried lentils, rinsed
  • 1 can (6 ounces) tomato paste
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon brown sugar
  • 1 tablespoon white vinegar
  • 1 teaspoon garlic salt
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dill weed
  • 1/4 teaspoon dried tarragon
  • 1/4 teaspoon pepper

Directions

  • In a large saucepan, combine the water, carrots, onion and lentils; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until vegetables and lentils are tender. Stir in the remaining ingredients; return to a boil. Reduce heat; simmer, uncovered, for 5 minutes to allow flavors to blend. Yield: 6 servings.

    For Sausage Variation: Stir in 1/2 pound chopped fully-cooked turkey sausage; heat through. For Kale Variation: Stir in 3 cups chopped fresh kale; cook, uncovered, until kale is tender. For Spiced Variation: Add 3/4 teaspoon garam masala when adding other seasonings.

Nutritional Facts 3/4 cup equals 138 calories, trace fat (trace saturated fat), 0 cholesterol, 351 mg sodium, 27 g carbohydrate, 9 g fiber, 8 g protein. Diabetic Exchanges: 1 starch, 1 lean meat, 1 vegetable.

Followed recipe except used fresh tarragon and thyme. Didn't really measure it. The thyme flavor was distinctive, but I grew to love it. I accidentally boiled it a little too long at first, bit not a problem. Great healthy recipe. Want to share with friends

<p>I liked it, but my husband didn't really care for something he just couldn't put his finger on. My kids won't eat it, so unfortunately, I probably won't make it again.

Very good recipe; very different flavors that worked out really well, and it was a good use of lentils. However, I found the soup wayyy too sweet; I will definitely use less brown sugar next time.

I made this soup per the original recipe (unlike so many others who rated it). I would make it again with changes: chicken or beef broth instead of water, fresh garlic, no brown sugar (too sweet), maybe some rotel (tomatoes and peppers) instead of the tomato paste. There just wasn't a satisfying depth of flavor in the original recipe.

Quick & Easy - Loved It! I sauteed the onion in olive oil first (don't like crunchy onions in soup). Used Buckwheat grouts instead of lentils (cut simmering time back to about 15 min as buckwheat doesn't take as long to cook). I added a jar of canned tomatoes and 1tbsp of dried red peppers (from Epicure) and 3 cups chopped kale during the last 5 minutes of simmering. YUM-O!

I've never cooked lentils before. I added all the "extras"; turkey sausage, kale and garam masala. I don't think I would like it without these. I only used 1/4 teaspoon of garam masala. It's not my favorite spice combo but a little added a lot to this soup.

This was very easy and very good, coming from someone who doesn't typically like lentils. The only reason I gave it four stars is because the lentils definitely need more time to cook (5-10 minutes longer) than the recipe states. Otherwise it was great!

Easy quick recipe. I used tomato paste with herbs and diced tomatoes with peppers and garlic for a little added zip. My very picky teenagers loved it!!!!!

I have a household of picky meat-n-potato eaters, and I thought this might be a nice change of pace. I liked it, but found it too sweet as is. Definitely give it a kick with some of the suggestions! For myself, I'd probably try it again, but nobody in my family would even try it, and it really needed a LOT more time to cook than the recipe states.

Easy delicious soup. I added 1c cooked tomatoes, 3 celery ribs, 1/4c yellow peppers, Hillshire sausage (a quarter of a length) and additional salt. Will make again, but use vegetalbe broth, more salt, fresh garlic & omit sugar. Great for winter!

I just finished making and eating this. I did omit the dill week and tarragon because I didn't have any. It was pretty good for just being beans and vegetables. Next time I might add some ground turkey.

I made this soup for dinner today..It was excellent.....very tasty. I used chicken stock instead of water and omitted the dill weed. Will be making this quick soup again. Thanks for a great recipe.

First time making soup, thought is was good but the lentils needed more time to cook, still tough when cooking as directed. we added mild italian sausage( i cooked separate, drained and removed casing before adding to soup), i def rec adding sausage! Can't go wrong making, very simple and easy!

Simply loved this soup! Packed with good stuff. Even my son, who doesn't normally eat any vegetables, loved this soup. I did add sausage (Hillshire brand) to the soup. I fried it before I added it to the soup, and drained off the fat.

This recipe was so-so. It seemed like it was missing something. I would probably rather buy a can of already made lentil soup. It's not that it was terrible, it just wasn't something I would want to give someone else. There are better things out there I would rather eat.

I've made this soup a couple of times since it appeared in TOH. Great soup! Added the gram marsala and used half broth/half water. The kale makes it even healthier. Definitely a keeper!!

Great tasting and great smelling soup. Very filling. I love the variety of spices. My husband and I are meateaters, but we did not miss the meat in this soup. Good diabetic recipe for my husband. I'm forwarding this recipe to my girlfriend. Will make this recipe a lot this winter.

SUPER EASY! I made this last night for my vegan sister who was visiting and it was a huge hit! I used vegetable broth instead of water and aded added 4 cups of chopped fresh Kale at the end. Delish! The leftovers tasted even better! This is now a staple for my home!

I followed the tip to add garam masala, which added just the right amount of kick. Also added 12 oz. of chopped habanero chile chicken sausage. Our guests and we loved it. The ingredients are pantry staples and readily available produce. I like the idea that the base is water. I disagree that using a broth instead of water is desireable.

Hmm...4 stars because I altered the recipe. I only had Italian herb tomato paste, so I used that. I used balsamic vinegar instead of white. Omitted all spices and herbs, except for adding the 3/4 tsp. garam marsala, which I've never used before. I sauteed mild turkey sausage which I simmered with the lentils, onions, and carrots. Substituted chicken broth for water (I really think that's a great idea from another person rating this recipe). It was quite sweet with the brown sugar, but I kind of liked it. The cooking time was off for me (I'm at a high altitude), and I cooked it at least twice as long, and the lentils and carrots were still al dente. Flavor? Well...it was good enough that I'd make it again. Maybe less sugar next time, and a teensy bit more salt (I did not add any salt this time, because I thought the chicken broth had enough.

This soup was quick and easy to put together, I followed the recipe to a T, except for the dill weed. I added salt and pepper to taste in my bowl, which was the only thing I will add when I make it again. Very filling and hearty!

I got out the Worcestershire sauce, used 3 T., and doubled the thyme. Also added hot sauce and some chili flakes. I like the suggestion for adding cooked crumbled spicy sausage. This soup was too sweet for me.

This soup sounded so good before I made

it but ........ I think a tablespoon of vinegar and brown sugar is way over the top. Maybe a teaspoon would have been more reasonable. All we couold taste was vinegar. My fix was to add cooked crumbled HOT sausage to soup and cook for a lot longer time.

I'm a very pickey eater and my mom made this for dinner and I was suprized on how good it was. I thought the season was great not to over done but one issue the Lentils were still hard! Was there a miss print on the cooking of the Lentils mom used regular kind of lentil beans is there acertain kind we should use. When I read the recipe I thought all beans were consdered Letil so was I wrong? I would make again and maybe try it with left over ham from the holiday meal's.

This was okay, but we have had much better lentil soups that we will go back to. We used homemade stock instead of water; lentils were tender in 25 minutes at an elevation of 5600 feet. Not sure we liked the tomato flavor with the lentils.

I doubled the recipe and added a little more water as the soup was a bit thick. I also added coarsely chopped cabbage and turkey sausage. It was fantastic and very easy to make (I was in a hurry so I bought shredded carrots and pre-chopped onions). There was virtually nothing to do but put it together.

I made this for dinner, and everyone loved it. I thought it might have been a bit heavy on the spices, but it was still very good. I doubled the recipe, added some coarsely-chopped cabbage, and diced up a ham steak and put that in. Definitely a hit with us!

Seriously YUMMY! For my taste preferences, I used 4 cups HOMEMADE chicken stock instead of water and only 1 carrot. I added 3 pressed garlic cloves and 1 pound browned chopped kielbasa. I omitted the parsley, vinegar, garlic salt, dill weed, and tarragon. My lentils were tender after 30 minutes.

Although this soup sounds good by reading the recipe, it failed on so many levels to meet my expectations. First, it states that the lentils should simmer for 20-25 minutes, it took almost two hours before they were soft enough to eat. The spice combination was so overwhelming that it was difficult to consume a bowl of this soup. We will not be making it again. If you like spicy, this might be for you, if not beware!
