Made it with the Italian chicken sausage from Meijer, and it was delicious. I forgot to start it this a.m. in the crock pot, so I cooked it on the stove. Turned out great.

I made this tonight using 1 tsp thyme and 1/2 tsp cumin. I also used 28oz can of Rotel for the tomatoes (not recommended-it was too spicy). Otherwise, it was delicious!

I made this for a church gathering and everyone was skeptical when they heard "Lentils" in the name. After one bite, all were converted!

I cooked this on top of the stove for about 2 hours on very low heat. I added some grated zucchini and yellow squash and added more of the other veggies. I didn't care much for the chicken sausage and think I will use Italian sausage or smoked sausage next time. This is one of those dishes where you can cut back on the meat and not lose any flavor. Delicious with home made French bread.
