Lemon and Tomato Sole Fillets Recipe

Ingredients

  • 2 - 4 ounces. sole fillets, rinsed and pat dry
  • Pinch lemon pepper seasoning
  • 1 small tomato, finely diced
  • 1 teaspoon capers, drained, rinsed
  • 1/4 teaspoons ground thyme
  • 1/4 teaspoons garlic powder
  • 1/2 tablespoons fresh lemon juice
  • 1 medium lemon, thinly sliced, for garnish, optional

Directions

  • Preheat broiler.
  • Season fillets with lemon pepper seasoning. Place in baking dish.
  • In small bowl, mix tomato, capers, thyme, garlic powder, and lemon juice. Pour juice mixture evenly over the fillets.
  • Cook for about 5 to 6 minutes, without turning. Garnish with lemon slices and serve.
