Lemon and Basil Snap Peas Recipe

Ingredients

  • 2 teaspoons olive oil
  • 1 teaspoon minced garlic
  • 1-1/2 lbs snap pea pods, trimmed
  • 1 cup chopped yellow bell peppers
  • 1/3 cup chopped fresh basil
  • 1/2 teaspoons sugar
  • 1/2 teaspoons grated lemon rind
  • 1/4 teaspoons salt
  • 1/4 teaspoons black pepper
  • 2 tablespoons fresh lemon juice

Directions

  • Pour oil into a nonstick skillet and place over medium-high heat. Saute the garlic for 30 seconds.
  • Add peas and bell pepper. Saute for about 2 to 3 minutes. Stir in the basil, sugar, lemon rind, salt, and pepper. Saute for 30 seconds.
  • Add lemon juice and saute for another 30 seconds.
