Lemon Sugar Cookies Recipe
  • Prep: 20 min. Bake: 10 min./batch

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup confectioners' sugar
  • 1 cup vegetable oil
  • 2 eggs
  • 1 teaspoon lemon extract
  • 4-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • Additional sugar

Directions

  • In a large bowl, cream butter, sugars and oil. Beat in eggs and extract. Combine flour, baking soda and cream of tartar; stir into creamed mixture (dough will be stiff). Roll into 1-in. balls; place 2-in. apart on ungreased baking sheets.Press with the bottom of a glass dipped in water, then in sugar. Bake at 350° for 10 minutes or until edges are lightly browned. Yield: about 11 dozen.

These are wonderful! The lemon flavor is subtle, but definitely there, and the cookies have good texture. Everyone in my house raved about these.

This is my favorite sugar cookie recipe to make. They are crispy, have a shortbread like texture and are the easiest to store. I also love the fact that they don't have to be rolled out! To the reviewer that said these cookies have no taste, pfft you did something wrong!

The cookies are so delicious. I cannot eat just one! I used lemon juice because I didn't have lemon extract. The flavor is just right. I shared some of the cookies with a friend, and she said, "They didn't last long!" I'm taking these to a cookie/recipe exchange, and I know they will be a big hit!

yum! As I get older, I like lemon flavor more and more. These cookies are so easy to make, very quick to whip up and the lemon flavor is light. So, if you really like lemon flavor you might add more than a teaspoon.

i liked these but i didn't have all the ingredients. i substitued lemon peel for the extract and used vanilla extract. i also used butter flavored crisco, less oil and flour to make them more of a drop cookie. i really like them and would make them again.
