Lemon Mustard Lamb Chops Recipe

Ingredients

  • 2 parsley sprigs
  • 2 tablespoons dijon mustard
  • 1 cup garlic cloves, minced
  • 1 teaspoon grated lemon peel
  • 1/2 teaspoons dried rosemary, crushed
  • 1 lb lean lamb loin chops, 4 - 4 ounce pieces
  • 2 tablespoons fresh lemon juice
  • Cooking spray
  • 1 medium lemon, quartered

Directions

  • In small bowl, blend parsley, mustard, garlic, lemon zest, and rosemary.
  • Place lamb chops in shallow baking dish.
  • Spoon lemon juice over chops, and let stand for 15 minutes.
  • Preheat broiler. Coat broiler pan and rack with cooking spray.
  • Place lamb chops on the prepared rack. Spread half of mustard mixture evenly over chops.
  • Broil chops 4-inch from the heat for 4 minutes. Turn and spread remaining mustard mixture evenly over the chops.
  • Broil for 4 to 5 minutes, until slightly pink in the center.
  • Garnish with lemon wedges.
