Lemon Herb Quinoa Recipe

Ingredients

  • 2 cups water
  • 1 cup quinoa, rinsed
  • 1/2 teaspoon salt, divided
  • 1 tablespoon minced fresh basil
  • 1 tablespoon minced fresh cilantro
  • 1-1/2 teaspoons minced fresh mint
  • 1 teaspoon grated lemon peel

Directions

  • In a small saucepan, bring water to a boil. Add quinoa and 1/4 teaspoon salt. Reduce heat; cover and simmer for 12-15 minutes or until liquid is absorbed.
  • Remove from the heat. Add the basil, cilantro, mint, lemon peel and remaining salt; fluff with a fork. Yield: 4 servings.

Editor's Note: Look for quinoa in the cereal, rice or organic food aisle.
