Lemon Garlic Hummus

3/4 cup canola oil
3 tablespoons lemon juice
2 cups garbanzo beans or chickpeas, rinsed and drained
2 teaspoons minced garlic
1/2 teaspoon salt
Pita bread, cut into wedges

In a food processor, combine the oil, lemon juice, beans, garlic and
salt; cover and process until smooth. Transfer to a small bowl. Serve
with pita wedges.

Yield: 1-1/2 cups.
