TIME: Prep/Total Time: 10 min.

Ingredients:

  • 3/4 cup canola oil
  • 3 tablespoons lemon juice
  • 2 cups garbanzo beans or chickpeas, rinsed and drained
  • 2 teaspoons minced garlic
  • 1/2 teaspoon salt
  • Pita bread, cut into wedges

Directions:

In a food processor, combine the oil, lemon juice, beans, garlic and salt; cover and process until smooth. Transfer to a small bowl. Serve with pita wedges. Yield: 1-1/2 cups.
