Lemon Crisp Cookies Recipe
  • Prep/Total Time: 30 min.
  • Yield: 24 Servings

Ingredients

  • 1 package (18-1/4 ounces) lemon cake mix
  • 1 cup crisp rice cereal
  • 1/2 cup butter, melted
  • 1 egg, lightly beaten
  • 1 teaspoon grated lemon peel

Directions

  • In a large bowl, combine all the ingredients (dough will be crumbly). Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets.
  • Bake at 350° for 10-12 minutes or until set. Cool for 1 minute; remove from pan to a wire rack to cool completely. Yield: about 4 dozen.

Nutritional Facts 2 cookies equals 128 calories, 6 g fat (3 g saturated fat), 19 mg cholesterol, 189 mg sodium, 18 g carbohydrate, trace fiber, 1 g protein.

I got this recipe years ago from a friend and loved it. I have also used this recipe with raspberry cake mix and that is delicious too.

I made these at the last minute to take to our church, and 4 of the ladies that work in the kitchen ran out and asked me to give them the recipe! So easy and the lemon is so refreshing!

Great! I love recipes that start with a cake mix. I keep cake mixes on hand, putting directions on a freezer baggie with other ingredients inside for trips in our motorhome.

Tried this recipe last night. Everyone loves them !! So easy and delicious !! It made appx. 4 dozen for me as I made a little larger than 1/2 inch. It made cookies about 2 inches in diameter , the perfect size for us. I highly recommend this recipe for anyone who wants a fast delicious cookie. I think trying different flavor cake mixes would make excellent cookies as well .

Very nice cookie. Quick & easy to make. Good texture & flavor. Didn't spread out much but puffed up well. Definitely a keeper. Thanks for sharing.
