Lemon Coriander Turkey Recipe

Ingredients

  • 1 whole turkey, 12 lbs
  • 1 teaspoon olive oil
  • 2 tablespoons oregano leaves
  • 2 tablespoons ground coriander
  • 1 tablespoon grated lemon rind
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper
  • 3 garlic cloves, crushed
  • 2 fresh lemons, halved
  • Cooking spray

Directions

  • Frozen 12-lb turkey will need 2 to 3 days to fully thaw. Refrigerator thawing is recommended.
  • Preheat oven to 350°F.
  • Lightly coat bottom of large roasting pan with cooking spray.
  • Remove and discard giblets and neck, trim excess fat.
  • Rinse turkey with cold water, pat dry.
  • Lightly coat turkey with oil.
  • In mixing bowl, combine oregano, coriander, lemon rind, salt, pepper.
  • Rub spices onto entire turkey.
  • Arrange garlic and lemon in cavity, tie ends of legs together with cord Lift wing tips, tuck under turkey.
  • Place turkey, breast side up, into roasting pan. Bake for 1 hour.
  • Cover breast with aluminum foil and bake another 2 hours or until internal temperature reaches 180°F.
  • Allow to cool 10 minutes before slicing.
