Lemon Burst Tartlets Recipe

Ingredients

  • 1 jar (10 ounces) lemon curd
  • 1 carton (8 ounces) frozen whipped topping, thawed
  • 5 to 6 drops yellow food coloring, optional
  • 2/3 cup raspberry cake and pastry filling
  • 2 packages (1.9 ounces each) frozen miniature phyllo tart shells
  • 30 fresh raspberries

Directions

  • In a large bowl, combine the lemon curd, whipped topping and food coloring if desired until smooth. Spoon 1 teaspoon raspberry filling into each tart shell. Pipe or spoon lemon mixture over filling. Garnish each with a raspberry. Refrigerate leftovers. Yield: 2-1/2 dozen.

Editor's Note: This recipe was tested with Solo brand cake and pastry filling. Look for it in the baking aisle.

If you can't find the Lemon Curd in the Jelly section of your store look for it in the baking isle. There are also some great creme curds out there now: banana, coconut and vanilla. They are great in place of the lemon curd in this recipe too

I made these in order to use the beautiful raspberries I just bought. While they are simple to put together they make a lovely presentation. My coworkers absolutely loved them!

I used Raspberry Pie filling from my Shaw's store, and the frozen shells - already baked! So quick...so easy...and so many compliments! I will DEFINITELY be making these again - I bet that they would be good with blueberries too!!!

I used the extra creamy Cool-Whip and rather than buying the Solo pastry filling, I used seedless raspberry jam I already had on hand and these were DE-LISH! So very pretty and so very easy to make - served them for a brunch and everyone loved them!

haven't made these YET, but will as soon as possible. Just wanted to mention if you have a Trader Joe's Market they carry lemon curd

Loved this!! You can go to your local grocery store, I go to Publix, and ask someone in the bakery for lemon and raspberry filling. Its a small charge and you get the same yummy stuff they use.

Easy and tastey. You can find the pie filling at Albertsons and Kroger. I also used lemon pie filling for the lemon curd. For the lady who grew raspberries, there are some good pie recipes on this site, with the recipe for filling just in case you cant' find the filling in stores near you. Thanks for the recipe.

There must be a good raspberry filling recipe out there somewhere!!! With all the raspberry bushes I have I would love to make my own. Tried to find one on the net, but didn't see anything that impressed me.

Went to the store and was able to get all the ingredients except the raspberry filling so I purchased some seedless raspberry jam. (BTW: The Lemon Curd is in the jam and jelly section)

You can find Lemon Curd at Raleys or Nob Hill grocery stores. But I son not know where we can find the raspberry filling. Sure hope someone can tell us because I would really love to make this.
