Layered Turtle Cheesecake Recipe
  • Prep: 40 min. Bake: 1-1/4 hours + chilling

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/4 cup finely chopped pecans
  • 6 tablespoons cold butter, cubed
  • FILLING:
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1/3 cup packed brown sugar
  • 1/4 cup plus 1 teaspoon all-purpose flour, divided
  • 2 tablespoons heavy whipping cream
  • 1-1/2 teaspoons vanilla extract
  • 4 eggs, lightly beaten
  • 1/2 cup milk chocolate chips, melted and cooled
  • 1/4 cup caramel ice cream topping
  • 1/3 cup chopped pecans
  • GANACHE:
  • 1/2 cup milk chocolate chips
  • 1/4 cup heavy whipping cream
  • 2 tablespoons chopped pecans
  • Additional caramel ice cream topping, optional

Directions

  • Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan.
  • In a small bowl, combine the flour, brown sugar and pecans; cut in butter until crumbly. Press onto the bottom of prepared pan. Place pan on a baking sheet. Bake at 325° for 12-15 minutes or until set. Cool on a wire rack.
  • In a large bowl, beat cream cheese and sugars until smooth. Beat in 1/4 cup flour, cream and vanilla. Add eggs; beat on low speed just until blended. Remove 1 cup batter to a small bowl; stir in melted chocolate. Spread over crust.
  • In another bowl, mix caramel topping and remaining flour; stir in pecans. Drop by tablespoonfuls over chocolate batter. Top with remaining batter. Place springform pan in a large baking pan; add 1 in. of hot water to larger pan.
  • Bake at 325° for 1-1/4 to 1-1/2 hours or until center is just set and top appears dull. Remove springform pan from water bath; remove foil. Cool cheesecake on a wire rack for 10 minutes. Loosen sides from pan with a knife; cool 1 hour longer. Refrigerate overnight.
  • For ganache, place chips in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chips; whisk until smooth. Cool slightly, stirring occasionally.
  • Remove sides of springform pan. Spread ganache over cheesecake; sprinkle with pecans. Refrigerate until set. If desired, drizzle with additional caramel topping before serving. Yield: 12 servings.

Nutritional Facts 1 slice (calculated without additional caramel topping) equals 664 calories, 46 g fat (25 g saturated fat), 182 mg cholesterol, 330 mg sodium, 55 g carbohydrate, 2 g fiber, 11 g protein.

I have made many cheesecake recipes but this was the best this year! It's worth the work and I wouldn't change a thing unless you wanted to make your own caramel sauce but you don't have to taste great both ways!

I used hot fudge and caramel ice cream topping to make the recipe a little easier and it tasted great. Very rich- you can only eat a little at a time but it's so delicious!

I loved the crust on this. The nuts give it a nice variation. I make regular NY style cheesecake often and this was a nice change of pace. The family really liked it.

I make treats for my husband's soldiers all the time. But this one was different. My husband told me that he left the room, after saving some for himself of course, for his break, and when he came back five to then minutes later it was gone. All of them LOVED it. I have made this 2x times now. First time, everyone raved about how amazing it was. I wanted to make it for a BBQ shortly after, but I didn't want such a big one. I cut the recipe in half and made it in a glass round bowl that was about half the size. Lined it all with a double layer of foil. It turned out absolutely perfect.

It is a lot of steps and detailed, but I promise the results are well worth it!

Made this for Father's Day for my husband who loves all things turtle. It was amazing!! My other family and friends don't know how lucky they are that I will be making this in the future for other special occassions. It's a bit time consuming and has to be made a day ahead, but 100% worth the the effort!

This turtle cheesecake was absolutely divine and can't wait for an excuse to make it again!! I made this for my birthday and had many rave reviews!! To take this to the next level, I would highly recommend toasting the pecans; and making your own thick and rich caramel topping melting caramel squares and heavy cream (the caramel sauce was also a huge hit!).

I made this for thanksgiving 2 years ago an my brother-in-law still raves about it.

I also made one last year an took to Texas to my aunts, they raved about it also i have made about 5 total an everyone that taste it enjoys it very much my 17 year old granddaughter helped an ate as much as she helped good memories.

I make this recipe and add special "secret" ingredients each time. I have sold several of them and they are the talk of the town. family begs for it, friends invite themselves over for it and I had one connoisseur said he has traveled the world over and has never tasted a better cheesecake...My signature cheesecake now!

I used this recipe for my first Thanksgiving. It was also my first time making cheesecake from scratch. I was overwhelmed by all of the steps but it was definitely worth it. I am hosting Thanksgiving again this year and everyone has requested I make the "best cheesecake ever" I think it will be a tradition to make this every year! Its simply amazing!

I made this for a surprise birthday party, the birthday girl loved it! She still raves about it and her birthday was 6 months ago! But once piece is all you need because, be warned, this is VERY SWEET!
