Lambertville Station Coconut Bread Recipe
  • Prep: 10 min. Bake: 40 min. + cooling
  • Yield: 16 Servings

Ingredients

  • 3 cups all-purpose flour
  • 1 cup sugar
  • 3 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 egg
  • 1-1/2 cups milk
  • 3/4 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 cup flaked coconut, toasted

Directions

  • In a large bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk and extracts. Stir into dry ingredients just until moistened. Fold in coconut.
  • Transfer to a greased 9-in. x 5-in. loaf pan. Bake at 350° for 40-50 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf (16 slices).

Nutritional Facts 1 slice equals 182 calories, 3 g fat (2 g saturated fat), 16 mg cholesterol, 215 mg sodium, 34 g carbohydrate, 1 g fiber, 4 g protein. Diabetic Exchanges: 2 starch, 1/2 fat.

I have lived in Lamertville for many years and have had dinner at the station many times, I love the coconut bread there. Now living in Cape May County and I was so pleased to see this recipe. I have tryed this recipe twice and it is not the same, there is something missing in this recipe and it may need some oil or shortning of some kind. I will try it again and add some oil.

this baked up beautiful, Loved it, Quick and Easy, my 9yr old grandaughter helped make it, Our only complaint is its dry, and took much longer to bake than 50 mins. but could of been my oven,! the toasted coconut taste , yummmmmm

I thought this would be more of a dessert. It wasn't sweet and there was just a hint of coconut. I was disappointed, but the taste of the bread was okay.

This bread was so quick and easy to make. I subsituted 1 can of coconut milk (13.5 oz.) for regular milk and it came out wonderful.

no need for eggs or oil. this bread comes out moist & delicious!! I have been to the Lambertville Station many times & I LOVE their coconut bread. I am so happy I found this recipe. now I can share this delicious bread with everyone!!

I usually have no trouble with recipes, but this one was dry and pretty tasteless - is there supposed to be oil or butter in it? 2 stars because it was easy...

My family had lunch at Lambertville Station for the first time recently and commented on how good this bread was. I'm hoping it is just like the one at the restaurant. Really excited to try it.

I agree - doesn't there need to be some oil or butter or shortening? I would love to make it - I think I'll compare it with a few other quickbread recipes and adjust.

I also was born and raised in Lambertville, NJ and have had dinner many times at the Lambertville Station, this coconut bread is excellent and I can't wait to make it.

I was born & raised in Lambertville, N.J. and remember the old train station where we used to play as children; it is now the Lambertville Station Restaurant! I intend to make this bread for Easter and am a big fan of anything coconut; I am going to e-mail the recipe to several family members & friends still residing in my old hometown; I'm sure they will love it.

There is no shortening in this recipe, doesn't it need some. Have no tried recipe yet.
