Ingredients

  • 1 lb pork shoulder
  • 1/2 lb ground beef (5% fat)
  • 2 teaspoons minced garlic
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1/2 teaspoons ground allspice
  • 1 teaspoon ground marjoram
  • Pinch kosher salt, optional

Directions

  • Preheat grill to medium.
  • Remove all fat from pork. Cut into 1-inch cubes.
  • In food processor, chop meat to your desired consistency.
  • Add ground beef, garlic, brown sugar, pepper, allspice, marjoram, and salt.
  • Form into patties, links or put into casings.
  • Place on grill and cook 15 minutes, turning once.
