I was really excited about making these because I am such a HUGE key lime fan. I was a little disappointed in combo of phyllo and mousse, though. The filling was yummy, but I think a graham cracker crust would be better...

These were great, but I am more of a Coconut-Lime lover! They were probably 5 stars as is, but with some changes they are more my taste. I thought they were extremely sweet, and I wanted them to blend a little better. What I did: I decreased the Sweetened Condensed milk to 1/2 cup. (That's what was left from making the first batch as directed) I added just a little less than 1/4 cup Key Lime juice. (I thought it was too runny) Then I added 1 Teaspoon of Coconut extract. When I whipped the heavy cream, I added about 1/2 teaspoon sugar..just an instinct. I folded in the whipped cream, and topped with toasted coconut! Now, I think these are amazing! I made both ways for my friends to try.. we'll see! Also, my mom made these before, and they froze well! Just don't freeze with the berries on top. I will definitely make these again! It was hard to believe they were that easy to make! LOVE THEM! UPDATE: The Girls loved both, but preferred the coconut-lime version. Try them both! I loved the thicker version too..with a little less lime juice and condensed milk - Perfect any time of the year!
