Cucumbers are my very favorite garden vegetable, so I use this recipe often. I got it from a friend 8 years ago. I've heard this refreshing dish keeps very well in the refrigerator, but it goes so fast around our house, I've never found out for myself. -Karen Ann Bland, Gove, Kansas

Kansas Cucumber Salad Recipe
  • Prep: 10 min. + chilling
  • Yield: 8 Servings

Ingredients

  • 1 cup Miracle Whip
  • 1/4 cup sugar
  • 4 teaspoons cider vinegar
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon salt, optional
  • 4 medium cucumbers, peeled and thinly sliced
  • 3 green onions, chopped

Directions

  • In a large bowl, combine Miracle Whip, sugar, vinegar, dill and salt if desired; mix well. Add cucumbers and onions; toss. Cover and chill for at least 1 hour. Yield: 8 servings.

Nutritional Analysis: One 2/3 cup serving (prepared with reduced-fat mayonnaise and without added salt) equals 126 calories, 8 g fat (0 saturated fat), 6 mg cholesterol, 197 mg sodium, 14 g carbohydrate, 0 fiber, 1 g protein. Diabetic Exchanges: 2 vegetable, 1-1/2 fat.

I use mayonnaise when I make this, I haven't been able to stomach Miracle Whip since child #2. We all love it!

This was really good. Fresh cukes from the garden made this a winner. They stayed crunchy. I used mayo, not Miracle Whip, since there was already sugar in it.

I have been making this recipe since I saw it in the Taste of Home mag. I love it! A real hit a picnics. The sweetness with the tang of vinegar & dill is awesome.

This is my VERY favorite cucumber salad. I have made it many, many times and everyone loves it. It is very simple to make and it tastes so good! I make it with Miracle Whip instead of mayo.

I first tried this salad when I attended a funeral in Burlington, Iowa. I was so impressed with it!!! I left a note with the church ladies to have the lady that made it please send it to me. I loved the hint of sweetness it has. I recevied the recipe today and am looking forward to making it soon.

I have been making these creamy cukes for many years now since I first saw the recipe. Whenever I serve them to guests, I always receive numerous compliments and requests for the recipe! It's a winner! I suggest chilling in the fridge for several hours to overnight B4 serving. -Lori in WI.
