INGREDIENTS
- 1-1/2 cups uncooked penne pasta
- 1 pound ground pork
- 1/2 cup chopped onion
- 1 can (14-1/2 ounces) stewed tomatoes
- 1 can (8 ounces) tomato sauce
- 1 teaspoon Italian seasoning
- 1 medium zucchini, cut into 1/4-inch slices
DIRECTIONS
Cook pasta according to package directions. Meanwhile, in a large skillet, cook pork and onion over medium heat until meat is no longer pink; drain. Add the tomatoes, tomato sauce and Italian seasoning. Bring to a boil. Reduce heat; cover and cook for 5 minutes or until heated through.
Drain pasta; add to skillet. Stir in zucchini. Cover and cook for 3-5 minutes or until zucchini is crisp-tender. Yield: 6 servings.
