Ingredients

  • 2 tablespoons fresh lime juice
  • 1/2 large jicama, peeled
  • 1 tablespoon orange juice
  • 1/2 medium zucchini, sliced
  • 1 tablespoon vegetable or olive oil
  • 1 medium oranges, cut into segments
  • 2 tablespoons finely chopped cilantro
  • 2 red onion slices
  • 2 teaspoons sugar
  • Pinch salt
  • Pinch black pepper
  • 6 romaine leaves

Directions

  • Whisk together all dressing ingredients and chill until ready to use.
  • Slice jicama into matchstick size pieces. Mix jicama with zucchini,
  • orange, and onion.
  • Drizzle dressing over salad and sprinkle with salt and pepper.
  • Place lettuce leaves on serving platter. Place salad on top of
  • lettuce. Serve.
