Jicama Salad

Ingredients
- 2 tablespoons fresh lime juice
- 1/2 large jicama, peeled
- 1 tablespoon orange juice
- 1/2 medium zucchini, sliced
- 1 tablespoon vegetable or olive oil
- 1 medium oranges, cut into segments
- 2 tablespoons finely chopped cilantro
- 2 red onion slices
- 2 teaspoons sugar
- Pinch salt
- Pinch black pepper
- 6 romaine leaves
Directions
- Whisk together all dressing ingredients and chill until ready to use.
- Slice jicama into matchstick size pieces. Mix jicama with zucchini,
- orange, and onion.
- Drizzle dressing over salad and sprinkle with salt and pepper.
- Place lettuce leaves on serving platter. Place salad on top of
- lettuce. Serve.
