Jalapeno Broccoli Recipe

Ingredients

  • 1 teaspoon salt, optional
  • 6 cups water
  • 1 bunch broccoli, trimmed and separated into spears
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • 2 jalapeno pepper, seeded and sliced thin
  • 1/4 each pine nuts, toasted

Directions

  • In medium sized bowl, combine 2 cups ice and cold tap water to 3/4 full. Set aside.
  • In medium pot over high heat, bring water and salt, if desired, to boil. Add broccoli, cook 5 minutes. Drain and place in water 30 seconds; drain again.
  • Place broccoli on serving plate and drizzle with vinegar.
  • In small pan over medium, heat oil and add sliced jalapeno. Saute 2- 3 minutes, or until jalapenos are soft. Pour over broccoli and top with pine nuts.

Nutritional Facts 1 serving equals 116 calories, 7 g fat (1 g saturated fat), 62 mg sodium, 11 g carbohydrate, 4 g protein. Diabetic Exchanges: 2 vegetable, 1-1/4 fat.

I wanted to add broccoli to our upcoming meal with friends and this sounded interesting. Everyone commented on the this side dish and how tasty it was. I use some very hot home grown jalapenos yet the dish is not that spicy. The cool crunchy texture went perfect with the mild zippy taste. Will definitely make again.
