Italian Style Tomato Frittata Recipe

Ingredients

  • 1/8 teaspoons black pepper
  • 1/8 teaspoons garlic powder, optional
  • 4 teaspoons chopped fresh basil
  • Cooking spray
  • 1 scallion, sliced thinly
  • 4 eggs
  • 2 g fresh plum tomatoes, thinly sliced
  • 1/2 cup shredded mozzarella cheese
  • 1 ounces grated Parmesan cheese

Directions

  • Preheat broiler.
  • In medium bowl, whisk eggs, basil, garlic powder, and pepper until well blended.
  • Coat 9-inch oven safe saute pan with cooking spray. Cook the scallion for about 1 minute over medium heat. Reduce heat to medium-low and add eggs.
  • Place tomato slices in top of the eggs. Sprinkle with mozzarella and Parmesan cheeses.
  • Cook approximately 4 minutes, or until the bottom is cooked and the top is still creamy. Place pan under broiler for 1 minute or until the top is puffed and cooked.
  • Remove from broiler, let rest 5 minutes. Using a spatula, remove frittata to serving plate and cut into 4 pieces, or serve from skillet.
