Italian Spiral Meat Loaf Recipe

Ingredients

  • 2 eggs, lightly beaten
  • 1 cup pizza sauce, divided
  • 1 cup seasoned bread crumbs
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 teaspoon dried oregano
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds lean ground beef (90% lean)
  • 1 pound bulk Italian sausage
  • 1/2 pound sliced deli ham
  • 2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
  • 1 jar (6 ounces) sliced mushrooms, drained

Directions

  • Preheat oven to 375°. In a large bowl, combine the eggs, 3/4 cup pizza sauce, bread crumbs, onion, green pepper, oregano, garlic, salt and pepper. Crumble beef and sausage over mixture and mix well.
  • On a piece of parchment paper, pat beef mixture into a 12x10-in. rectangle. Layer with ham, 1-1/2 cups cheese and mushrooms over beef mixture to within 1 in. of edges. Roll up jelly-roll style, starting with a short side and peeling parchment paper away as you roll. Seal seam and ends. Place seam side down in a greased 13x9-in. baking dish; brush with remaining pizza sauce.
  • Bake, uncovered, 1 hour. Sprinkle with cheese. Bake 15-20 minutes or until no pink remains and a thermometer reads 160°. Using two large spatulas, carefully transfer meat loaf to a serving platter. Yield: 12 servings.

I just made this recipe for the 2nd time, I actually made two and feed 20 people-there wasn't even a crumb left. It is a great meatloaf-and i recommend the 'make ahead mashed potatoes' to go with it, they are pictured with the meatloaf.

Outstanding recipe! Follow the recipe exactly except divide the meat mixture in two and roll out on aluminum foil or wax paper to fit 2 bread pans. I used 12 oz. of pizza sauce and added the extra to the top. This recipe is definitely a SAVE.

This meatloaf was absolutely delicious. The only changes I made were: I used a whole jar of pizza sauce and I used Italian Panko Breadcrumbs. This recipe would be great for a gathering because it makes alot. Will definitely make again. YUM

This was VERY good. A nice change from my regular meatloaf. I had to cook for nearly two hours and I also served with spagetti sauce on the side. Makes a ton!

I made this using "mild" Italian sausage, it was still way to spicy. My family said, it's OK, but don't make it again.

I made this as written except for the green pepper since I didn't have one. We loved it. I think I will make it into two loaves next time though. Mine cracked open at the top so maybe you have to do a really good job of mixing everything so it doesn't do that.

Best meatloaf I have ever eaten. I didn't swirl mine but folded it like a stuffed meatloaf and it still came out perfect. My kids loved it! Thanks so much.
