Italian Cabbage and Rice Recipe

Ingredients

1-1/2 pounds ground pork
1 cup chopped onion
2 garlic cloves, minced
4 cups shredded cabbage
1 can (8 ounces) tomato sauce
1 cup chicken broth
2 tablespoons red wine vinegar
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon fennel seed
1/4 teaspoon pepper
1/4 teaspoon sugar
3 cups cooked long grain rice
6 bacon strips, cooked and crumbled
1/4 teaspoon crushed red pepper flakes, optional
Grated Parmesan cheese, optional

Directions

In a large skillet, cook pork, onion and garlic until pork is browned; drain. Add the next nine ingredients; cover and simmer for 5 minutes. Stir in rice, bacon and red pepper flakes if desired; cover and simmer 5 minutes more or until cabbage is tender. Sprinkle with Parmesan cheese if desired. Yield: 6 servings.
