Italian Cabbage and Rice Recipe

Ingredients

  • 1-1/2 pounds ground pork
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 4 cups shredded cabbage
  • 1 can (8 ounces) tomato sauce
  • 1 cup chicken broth
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon fennel seed
  • 1/4 teaspoon pepper
  • 1/4 teaspoon sugar
  • 3 cups cooked long grain rice
  • 6 bacon strips, cooked and crumbled
  • 1/4 teaspoon crushed red pepper flakes, optional
  • Grated Parmesan cheese, optional

Directions

  • In a large skillet, cook pork, onion and garlic until pork is browned; drain. Add the next nine ingredients; cover and simmer for 5 minutes. Stir in rice, bacon and red pepper flakes if desired; cover and simmer 5 minutes more or until cabbage is tender. Sprinkle with Parmesan cheese if desired. Yield: 6 servings.
