Italian Broccoli Rabe Recipe

Ingredients

  • 1/2 teaspoons salt
  • 6 cups cold water
  • 1-1/4 lb fresh broccoli rabe, trimmed
  • 4 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 tablespoons grated Parmesan cheese

Directions

  • In large pot, add salt and water, bring boil.
  • Cut an X in bottom of broccoli rabe stems, gently place into boiling water.
  • Cook until tender but still firm, about 4 minutes. Drain.
  • In large heavy skillet heat olive oil over medium heat. Add garlic and saute 1-2 minutes.
  • Stir in the broccoli rabe, saute 10 minutes, or until desired doneness.
  • Sprinkle with Parmesan cheese before serving.
