Italian Baked Fish Recipe

Ingredients

  • 4 fresh cod fillets, 4 ounce each
  • 14-1/2 ounces canned Italian style stewed tomatoes
  • 1/4 teaspoons onion flakes
  • 1/2 teaspoons powdered garlic
  • 1/4 teaspoons dried basil
  • 1/2 teaspoons dried parsley
  • 1/8 teaspoons ground oregano
  • 1 tablespoon grated Parmesan cheese
  • Cooking spray

Directions

  • Preheat oven to 375°F.
  • Rinse cod with cold water and pat dry with paper towels.
  • Coat baking dish with cooking spray.
  • In small bowl, mix stewed tomatoes, onion flakes, garlic, basil, parsley, oregano, sugar, and cheese.
  • Transfer to baking dish. Arrange fillets on top of tomato mixture. Spoon 1 tablespoon of tomatoes on top of each fillet.
  • Bake uncovered, 20-25 minutes, or until the fish is opaque and fork flaky.

I was looking for something different to do with the fish I had bought for dinner and came across this recipe. My husband and I enjoyed this dish very much. I made the recipe as stated with the exception that I sprinkled all the spices and cheese on both sides of the fish, topped with tomatoes then the juice and sprinkled a pinch of sugar on the top with Parmesan cheese. Just a note, the recipe ingredients do not say anything about the sugar, but does talk about it in the directions. Will make again.
