Ingredients

  • 3 cups fresh corn, cooked
  • 3 green onions, sliced
  • 2 small tomatoes, diced
  • 3/4 cup diced unpeeled cucumber
  • 1/4 cup diced onion
  • 1/4 cup sour cream
  • 2 tablespoon mayonnaise
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon ground mustard

Directions

  • In a large bowl, combine corn, green onions, tomatoes, cucumber and onion. Combine remaining ingredients in a small bowl; pour over vegetables and toss to coat. Cover and refrigerate for several hours or overnight. Yield: 8-10 servings.

Nutrition Facts: 1 serving (3/4 cup) equals 82 calories, 4 g fat (1 g saturated fat), 5 mg cholesterol, 146 mg sodium, 11 g carbohydrate, 2 g fiber, 2 g protein.
