Indian Style Shrimp Recipe

Ingredients

  • 1 lb large raw shrimp, peeled, deveined, rinsed, and patted dry
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cup canned unsalted diced tomatoes, drain well
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoons ground coriander
  • 1/4 teaspoons ground ginger
  • 1/8 teaspoons ground cayenne (red pepper)
  • 1/4 teaspoons ground cumin
  • 4 parsley sprigs

Directions

  • In nonstick skillet, heat oil to medium. Saute onion and garlic for 3 minutes.
  • Add tomatoes, lemon juice, coriander, ginger, pepper, and cumin.
  • Bring to boil then lower heat. Cover and let simmer for 15 minutes. Stir once to mix.
  • Add shrimp and cook for 3 to 5 minutes, until shrimp is pink and opaque. Garnish with parsley.
