Indian Spiced Brussels Sprouts Recipe

Ingredients

  • Cooking spray
  • 1/2 teaspoons mustard seed
  • 1/2 teaspoons cumin seeds
  • 1/2 teaspoons fennel seed
  • 8 ounces fresh brussels sprouts, halved
  • 1/3 cup vegetable or chicken broth
  • 2 teaspoons minced fresh gingerroot
  • 1/4 teaspoons salt
  • 1/4 teaspoons ground cayenne (red pepper) or 1 dried red Thai chile pepper, crushed
  • 1/2 ounces coarsely chopped cashews or peanuts, equal to 1 tablespoon
  • 2 teaspoons red wine or sherry vinegar

Directions

  • Coat medium saucepan with cooking spray. Heat saucepan over medium-high heat.
  • Add mustard, cumin and fennel seeds; cook and stir for 30 seconds.
  • Add Brussels sprouts, chicken broth, ginger, salt and crushed red peppper.
  • Bring to boil then reduce heat. Simmer, covered for 10 to 12 minutes or until Brussels sprouts are tender.
  • Stir occasionally. Stir in nuts and vinegar.

Nutritional Facts 1 serving equals 46 calories, 2 g fat (trace saturated fat), 202 mg sodium, 6 g carbohydrate, 2 g protein. Diabetic Exchanges: 3/4 vegetable, 1/4 fat.
