Ingredients

  • 1 quart ice cream
  • 2 cups finely chopped toasted pecans
  • 2 cups (12 ounces) semisweet chocolate chips
  • 1/2 cup butter
  • 1 tablespoon instant coffee granules

Directions

  • Make 3/4-in. ice cream balls with a small melon-ball scoop;
  • immediately roll in pecans. Cover and freeze until firm, at least 1
  • hour.
  • In a microwave or small saucepan, melt the chocolate chips and
  • butter; stir until smooth. Stir in coffee until dissolved. Remove 10
  • ice cream balls from freezer; push a toothpick into each. Holding
  • toothpick and working quickly, dip balls in chocolate mixture. Place
  • on waxed paper or press toothpicks into Styrofoam block. Return to
  • freezer. Repeat with remaining balls. Place in small paper cups or
  • wrap with foil or plastic wrap. Store in freezer. Yield: about 5
  • dozen.
