It wouldn't be St. Pat's Day without corned beef...and folks will love these savory sandwiches from Toni Keyworth. "My mother-in-law gave me this recipe. It always proves to be fast when time is short," she writes from Yale, Michigan. "I've also placed the filling between slices of bread and cooked the sandwiches like grilled cheese.

Quick Homemade CroutonsI hate to waste the heel from a loaf of bread or a few leftover hot dog or hamburger buns. So I cube them into a bowl, spray them with nonstick cooking spray and season with garlic powder, parsley and basil or oregano. Then I bake them on a cookie sheet at 250° until they’re crisp and brown. My family loves the quick homemade croutons. —Nancy C., Windermere, Florida

My family absolutely loves these delicious sandwiches! I get requests to make them often. They are very simple to make and do not take very long at all!

Love this recipe! Wow, can't remember how many years ago I discovered this very tasty recipe, but it has been tradition ever since. Was not sure how well this would go over considering most of the crowd was not too big on corned beef. Double batch...gone in no time!! Very Happy Irish Girl ;-)
