Ingredients

  • 3 cups cubed cooked chicken breast
  • 2 cups mayonnaise
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 2 celery ribs, finely chopped
  • 2 cups cooked rice
  • 1 can (8 ounces) sliced water chestnuts, drained
  • 1 teaspoon grated onion
  • 1 teaspoon lemon juice
  • TOPPING:
  • 2 cups crushed cornflakes
  • 1/2 cup slivered almonds
  • 1/2 cup butter, melted

Directions

  • In a large bowl, combine the first eight ingredients. Transfer to a greased 13-in. x 9-in. baking dish.
  • Combine topping ingredients; sprinkle over top of casserole. Bake, uncovered, at 350° for 40-45 minutes or until bubbly. Yield: 8 servings.

Nutrition Facts: 1 serving equals 804 calories, 63 g fat (15 g saturated fat), 94 mg cholesterol, 856 mg sodium, 39 g carbohydrate, 2 g fiber, 20 g protein.

Just having two stents put in, I could feel the cholesterol just reading this one! Please help get the fat down...thanks

I'm with the majority. Too many calories, too much fat, cholesterol and sodium. This is the case in most of your recipes. Sounds like all of us have either learned to adjust your recipes or they're just not made. How many people eat like this anymore. I think you need to start printing "healthy" versions of all your recipes. Help us out here.

Two easier lighteners: low fat/low sodium soup and light or no-fat mayonnaise. I just automatically do those with any recipe calling for condensed soup and mayonnaise.

Years ago I made this dish (before the days of counting fat grams) and it was a success everytime I served it. I used to put it over Chinese noodles. The crunch with the celery & water chestnuts was wonderful. Maybe someone'll "de-fat" it...juliebelle6491

soungs yummy but I have to agree with the others. Too much fat, calories and goodness that is more sodium than most consume in a day or two.

Not many of us can consume 804 calories and 63 grams of fat for one serving of pasta. Maybe this should get "lightened up" by your Healthey cooking people. I'm actually surprised to see this here!!!
