I usually have the ingredients for this melon salad on hand. It's a refreshing side dish for any meal, and it's a good and fast contribution to a potluck. Sliced bananas, strawberries and apples taste great in it, too.

Honey-Lime Melon Salad Recipe

Prep/Total Time: 10 min.

Yield: 6-8 Servings

Ingredients

3 cups cubed honeydew
2 cups cubed watermelon
2 cups cubed cantaloupe
1/2 cup seedless red grapes
DRESSING:
2 tablespoons canola oil
2 tablespoons lime juice
1 tablespoon honey
1/4 teaspoon grated lime peel

Directions

In a large serving bowl, combine the fruits. Whisk together dressing ingredients. Drizzle over fruit; toss to coat. Serve immediately. Yield: 6-8 servings.

Nutritional Facts 1 serving (1 cup) equals 93 calories, 4 g fat (trace saturated fat), 0 cholesterol, 12 mg sodium, 17 g carbohydrate, 1 g fiber, 1 g protein.
