Homemade Turkey Soup Recipe

Ingredients

  • 1 leftover turkey carcass (from a 10- to 12-pound turkey)
  • 2 quarts water
  • 1 medium onion, halved
  • 1/2 teaspoon salt
  • 2 bay leaves
  • 1 cup chopped carrots
  • 1 cup uncooked long grain rice
  • 1/3 cup chopped celery
  • 1/4 cup chopped onion
  • 1 can (10-3/4 ounces) condensed cream of chicken or cream of mushroom soup, undiluted

Directions

  • Place the turkey carcass in a stockpot; add the water, onion, salt and bay leaves. Slowly bring to a boil over low heat; cover and simmer for 2 hours.
  • Remove carcass; cool. Strain broth and skim off fat. Discard onion and bay leaves. Return broth to the pan. Add the carrots, rice, celery and chopped onion; cover and simmer until rice and vegetables are tender.
  • Remove turkey from bones; discard bones and cut turkey into bite-size pieces. Add turkey and cream soup to broth; heat through. Yield: 8-10 servings (about 2 quarts).

I have used this recipe for a few years and LOVE IT!! I look forward to having a turkey carcuss just to make this, I made it today and have enough to put in the freezer. I add pepper and peas and more chicken broth but it is the best ever!!!

This soup is awesome!! Did some changes as I didn't keep the turkey carcass. I used 2 cans of chicken broth and que'd up with water to get right consistency. I don't like bay leaves so I used summer savory. I will definetly do it again.

Made exactly as the recipe says and it absolutely delicious and full of flavor. This recipe is definitely a keeper. One of the best and richest tasting soups I have ever made!

Very good! I thought the turkey that I pulled off the carcas had no flavor so I cut up some leftover turkey and added it. I also substituted quinoa for rice....only need to add 1/2 cup or you end up with way too much quinoa--ask me how I know! All in all very good rich turkey soup. Perfect for a cold day.

I put the carcus of a turkey breast in the crock pot with some water, salt, pepper and thyme and let it cook on low all night. The house smelled great and I have some great condensed broth for soup. The crock pot is thre way to go.

I wanted to add that turkey soup is a big hit in my family, but we do not use rice. I use a crockpot to make the broth, and I usually just put the turkey in it when I clean up, then go to bed. When I reassemble it, I use noodles (the dumpling kind are great, but any kind works). I accidentally added too many noodles the first time I made it, but it was such a hit it's now the regular way. We make it the same way otherwise, but for us it's turkey and noodles.

When cooking the turkey carcass, wrap it in cheesecloth and you won't have to search for little bones in the soup liquoid. I always use cheesecloth for ham bones, chicken and turkey carcasses.

Husband and I loved it. I made it the first time after Thanksgiving. Only I used the wings. It was what I had. I have a turkey in oven right now and plan on making it again.

this is the first soup I ever made from scratch.Delicious,esay and healthy. You don't need to add the salt for those with high blood pressure.It still is delicious.
