TIME: Prep/Total Time: 30 min.
Ingredients:
- 1 tablespoon sugar
- 2 teaspoons all-purpose flour
- 1/4 teaspoon ground mustard
- Pinch salt
- 1 egg, beaten
- 1/3 cup water
- 1 tablespoon vinegar
- 3/4 cup mayonnaise or salad dressing
- 5 large potatoes, peeled and cubed
- 4 hard-cooked eggs, chopped
- 1 cup chopped celery
- 1/4 cup chopped green onions
- Salt and pepper to taste
Directions:
In a small saucepan, combine the sugar, flour, mustard and salt. Combine egg, water and vinegar; stir into dry ingredients until smooth. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes Remove from the heat; cool slightly. Stir in mayonnaise. In a bowl, combine the potatoes, hard-cooked eggs, celery, onions, salt and pepper. Add the dressing and toss gently to coat. Refrigerate until ready to serve. Yield: 8-10 servings.
