Homemade Italian Turkey Sausage Recipe
  • Prep: 10 min. + chilling Cook: 10 min.

Ingredients

  • 1 pound lean ground turkey
  • 2 teaspoons garlic powder
  • 1-1/2 teaspoons fennel seed, crushed
  • 1-1/2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon pepper

Directions

  • In a bowl, combine the turkey, garlic powder, fennel seed, sugar, salt, oregano and pepper. Cover and refrigerate for at least 8 hours or overnight. Shape into eight patties. Cook in a nonstick skillet coated with cooking spray for about 3 minutes on each side or until a meat thermometer reads 165°. Or crumble turkey into a nonstick skillet coated with cooking spray. Cook and stir for about 4 minutes or until meat is no longer pink. Yield: 8 servings.

Nutritional Analysis: One serving (1 patty or 1/4 cup of crumbles) equals 92 calories, 5 g fat (1 g saturated fat), 45 mg cholesterol, 347 mg sodium, 2 g carbohydrate, trace fiber, 10 g protein. Diabetic Exchange: 2 lean meat.

If you have a vegetarian in your family, this can also be made with Gimme Lean sausage style and is really delicious. It should also be stored in the fridge overnight for the flavors to develop. We sometimes serve this with colorful pepper slices and a balsamic vinegar/sugar glaze over rice.

Love this. It's so easy to make and more economical than buying premade turkey sausage. I make larger batches of it and freeze it in 1 lb. packages for future use.

This recipe was really tasty but a little salty. (Next time I will cut the salt in 1/2!) I didn't have time to let it sit for the full 8 hours so I ground all the flavors together and mixed it with the meat before cooking it as ground sausage for "Lasagna Roll-Ups" (another T of H recipe) to make the meal as economical as possible. Thanks for sharing the recipe-my family gave it a BIG thumbs-up!
