Homemade Fish Sticks Recipe

Ingredients

  • 1/2 cup all-purpose flour
  • 1 egg, beaten
  • 1/2 cup dry bread crumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon lemon-pepper seasoning
  • 3/4 pound cod fillets, cut into 1-inch strips
  • Butter-flavored cooking spray

Directions

  • Place flour and egg in separate shallow bowls. In another shallow bowl, combine bread crumbs and seasonings. Dip fish in the flour, then egg, then roll in the crumb mixture.
  • Place on a baking sheet coated with cooking spray. Spritz fish sticks with butter-flavored spray. Bake at 400° for 10-12 minutes or until fish flakes easily with a fork, turning once. Yield: 2 servings.

Nutritional Facts 1 serving equals 278 calories, 4 g fat (1 g saturated fat), 129 mg cholesterol, 718 mg sodium, 25 g carbohydrate, 1 g fiber, 33 g protein. Diabetic Exchanges: 4 lean meat, 1-1/2 starch.

While the process to make them was easy, I found the coating to be lacking in flavor. They were bland and boring.

These are great! Even non-fish eaters will love them. I made a second batch with half cornmeal and half Parmesan cheese because I was out of bread crumbs by then, and my husband liked them even more. Great recipe!

I would make this recipe again. I too did not use the spray on the fish sticks. The fish sticks were crispy and the flavour was great. My family agreed that this recipe was a keeper for us.

My husband and I have incorporated healthier choices into our overall plan to be better as we age. This is a GREAT recipe. I used panko breadcrumbs that gave the fish a wonderful crunch!

I used a combination of panko and wheat germ because I was out of breadcrumbs - my picky kids loved them thank you!!!

Boy did they change my recipe! I use haddock but I know it can be hard to find. Also I use sea salt which is lower in sodium than table salt, and I would never use cooking spray because of all the chemicals! -Jennifer R.
