Homemade Coleslaw Dressing Recipe
  • Prep: 25 min. + chilling
  • Yield: 6-8 Servings

Ingredients

  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon paprika
  • 4 egg yolks
  • 1/2 cup water
  • 1/3 cup white vinegar
  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage

Directions

  • In a heavy saucepan, whisk the sugar, salt, mustard, paprika and egg yolks until smooth. Gradually whisk in water and vinegar. Cook and stir over medium heat until a thermometer reads 160° and mixture is thickened. Remove from the heat; cool to room temperature.
  • Place the cabbage in a bowl; add dressing and toss to coat. Refrigerate until serving. Yield: 6-8 servings.

Nutritional Facts 1 serving (3/4 cup) equals 51 calories, 3 g fat (1 g saturated fat), 106 mg cholesterol, 156 mg sodium, 5 g carbohydrate, 1 g fiber, 2 g protein.
