LOVED this recipe. So easy to make! I agree the chilling time given makes this impossible to work with, though. I chilled for an hour and after a half hour out of the fridge could easily work with it. I made a number of variations including rolling in chopped up Andes peppermint candies. It gave them a festive red and white coloring. The favorite seems to be the batch I used almond flavoring in rather than the vanilla, though. I then rolled it in chopped coconut. Definitely making every Christmas!

This recipe couldn't be easier. My four-year-old daughter was more than happy to help in the kitchen. After I chilled the mixture for three hours, it was beyond firm and I was unable to shape into balls without first bringing it back to room temperature. Delicious results though!
