Keeping Lettuce FreshTo store lettuce to keep it crisp and fresh, wash lettuce in cold water and drain very well. Use a “salad spinner” or pat it dry with paper towels. Store in a resealable plastic bag or airtight container with a dry paper towel in the bottom to absorb any leftover moisture. (Be certain to replace the towel if it gets wet.) For extra-crispy salads, you may want to use a lettuce variety like romaine that’s naturally more crisp.

I love this recipe, I had to try it out for a Christmas luncheon and it was loved by 10 ladies, and I will make it again for Christmas dinner for my family. It made a big hit. It is a keeper. thank you

I can't wait to try this!! Oh my goodness it sounds amazing!! Love cashews, but I bet with the apple, candied or glazed walnuts would be scrumptious!

I don't get in the review sections for the simple fact, some people are so rude. They just look for something to complain about and to insult people. People try to share recipes and there is always someone putting it down. Come on people, what happened to "thanks for posting your recipe?" Keep on posting vrdeboer, I enjoy looking at your recipes.

I look forward to making this recipe, and while I haven't made it yet, I wanted to address some of the other reviews. Actually, it DOES say it's diabetic friendly on top where it says THIS RECIPE IS: Healthy, Quick and Diabetic Friendly. What we all have to remember is, it's all about portion control, and if you realize the amount of the item you're preparing is often for MANY, then do your math. Again, if you don't want to make it, then don't, but you don't have to bad mouth it, it's still up to the individual cook.

To vrdeboer: The only crime here is YOU can't read. It says Diabetic Exchanges NOT Diabetic Friendly! Learn to read before opening mouth and exposing the sad fact.

Very good!! To vrdeboer: I don't see where anyone called this diabetic friendly, only that it gives diabetic exchanges. If you don't like a recipe, don't try it. I hate when ppl don't get on to rate a recipe but instead make bad remarks (many posters do this). If you don't like it, don't try it.

The carbs is this salad are only 1 carb serving. 15 gms. are a serving the same as an apple or slice of bread. This salad is amazing.

My aunt makes a version of this recipe with only pears. Personally I don't like cashews either but in this salad they're fine! This salad is always gone at the end of dinner. yummo!
